A Farewell note from Tobias Peach

Greetings All,

fleur_deAfter 3 1/2 years my tenure here a Fleur is coming to a close next Friday. I will be opening Sage restaurant at Aria in City Center for Chef Shawn McClain. I just wanted to take a quick moment to thank those of you who made my experience here at Fleur one I will always look back on fondly. All of you in some way contributed to the evolution of Fleur de Lys. Whether it was singing our praises, sending us guests, selling us superior product, supporting our ideas, or of course dining here yourselves, I truly thank you. Thank you to Adam Odegard, Omar Gutierrez & the rest of the Mandalay Bay team for believing in our ideas & allowing us to realize them. Working for Hubert Keller has been one of the true honors of my career. I’m very proud of what we have accomplished together & I look forward to working with him again in the future. As most of you know, his kindness is no act. I’ve never met a chef with a more genuine desire to make sure every guest in his dining room feels truly special. Everyone gets a hello, a handshake, & many times a funny story about Paul Bocuse or Cooking for the president. He is the hardest working person I’ve ever known & he deserves all the success he has & will have in the future. Thank you chef for everything you have taught me & I’m proud to call you my friend. If any you have time next week & you are in town, please stop by the restaurant. Hubert will be flying in for my last day & we would love to see old friends.  If not, I look forward to seeing you during my new adventure.

Sante & Au Revoir,

Toby
